Buffalo Wings Recipe

I've never been to buffalo, so I don't know how accurate these are. But they are VERY moreish.

800g chicken wings (they seem to come from the supermarket in packets about this size)
2 Tablespoon Dark Soy Sauce
1 Tablespoon Maple Syrup
2 Teaspoon Paprika Powder
1 Teaspoon Ginger Powder
4 Birds-eye Chillies
Juice of 1 Lemon.

Method
Pre-heat the oven to 200 Degree Centigrade (400F, Gas Mark 6).

Cut up the chicken wings at each joint and throw the wing tips away (you could save them for stock in the freezer if you're that organised). Put the other two pieces of the wings in a bowl with all of the other ingredients and mix them up with your hands.

Turn the contents of the bowl out onto a baking tray that you've covered in aluminium foil (saving you a ton of washing up).

Cook for 30 mins or until golden brown - charring depending on taste, then take them out, turn each wing over so the well-cooked side is on the bottom and give them another 30 mins.

Serve with plain-boiled basmati rice and a salad - or with roast potatoes you've done at the same time in the oven if you want to pig out.
